Crab Cake Tacos?

Scott was watching Triple D...Diner's, Drive-in's and Dives...and was inspired to go to the store...to cook what? He told me he was "just looking"...uh, oh...wonder what will we have for dinner? Guy Fieri, or however you spell his name...well there are just crazy menu items featured on this show! Things like fried chix benedict...crazy stuff...so no wonder when Scott later announced Crab Cake Tacos...well eaters can't be choosers...if he's gonna cook...twist my arm! You'd think crab cakes would be enough...but in our house many things are elevated in popularity if its in a tortilla or between two pieces of bread with mayo and cheese. I have to admit, in the spirit of the crazy dishes on Triple D...I made up a 'crab cake benedict' recipe (at least in theory), of a piece of buttered toast (think a thin slice of good sourdough, toasted with butter), a crab cake, a fried egg, melted cheese and either hollendaise (sp?) or peppery cream gravy...scott shouted out, 'Bacon' somewhere in there. Now that's just wrong...and sounds so delicious. Thanks to Triple D inspiration... Crab Cake Tacos ala Scott it is...and they were very good...even cold for breakfast:)

Crab Cakes inspired by America's Test Kitchen recipe:
1 lb crab meat
6 TBS dried breadcrumbs
1 small onion, chopped, and sauteed till caramelized before
1 TBS chopped fresh herbs, we used cilantro and basil tonight
1&1/2 tsp Old Bay seasoning
1/4 c mayo
s&p
1 large egg, lightly beaten
1/4 c all purpose flour
1/4 c veggie oil
corn tortillas, at least 2 per person (this serves about 4)
sour cream
sprinkle cheese
lime or lemon wedge
1. Gently toss crab, 4 TBS of bread crumbs, 1/2 of sauteed onion, fresh herb and Old Bay in a large bowl. Add mayo and gently combine. season w/ s&p to taste, gently fold in egg, add extra bread crumbs if necessary for mixture to hold together.
2. Divide mixture into four equal portions, (can make into smaller cakes, and have a few more), shape into patty...chill, covered for 30 min.
3. Dust cakes lightly in flour, saute in med/hot skillet (with veggie oil), cooking till crisp and brown on both sides, about 10 min. Cut each cake in half and serve in corn tortillas (we lightly crisp ours in a little pan of hot oil), with topping of choice...here, sour cream, and the remaining sauteed onion...and ketchup for my Scott:) We should have spritz with a little lemon or lime...but we forgot. They were delicious! I am ashamed I ever doubted him...do forgive me as I wipe the sourcream from my lip:)
