5.13.11 Steak Frites

tomato basil & vinegrete...with a little parm sprinkle rested filets with a little butter garnish fries...enuf said dinner is served...who needs a restaurant? It's Friday nite...time for some home cooking....Scott saw filets on sale at Market Street...so Steak Frites it was for dinner...three small filets...salted, peppered and  a tiny bit of garlic powder...oiled and seared in a screaming hot cast iron skillet...two min per side (we wrapped them in twine to keep them evenly cooked)...then a 400 or so oven for about 5-8 min (check Ina Garten's recipe for filets)...butter tabs on top...rested for 5 or so min... meanwhile in a skillet nearby... french fried taters were bubbling away in hot oil...about 2 lrg russets..peeled and sliced thin and wide, having been soaked in h20 and drained.......cooked till golden and salted..served with ketchup. it was deeeeelicious, as my little Madi would say...perfect it would have been perfect if not for needing to be ...

12.5.10 Sunday evening burgers & fries

It is a chilly sunday evening in the works home...scott's watching ball and getting the kitchen prepped for burgers & fries.  I'm writing with Alice in Wonderland on the tv...love this movie and the theme of Alice losing her "muchness", being the "wrong" Alice, and then finding her "muchness" and becoming her true self again.  Inspires me..."...I often think of six impossible things before breakfast" I've already peeled, cut and soaked the potatoes (which were "golden potatoes", but looked a bit green).  And then formed and seasoned the patties with Scott...he seasoned, I "rubbed the meat" as Paula Deen would say..."gotta rub your meat!"...and as Emeril reminds us..."my meat doesn't come seasoned, does yours?"...s&p and garlic powder...each a 1/3lb burger (ground chuck) Tonight it will be avocado, roma tomato, carmelized onion & mushrooms (left over from pizza palooza), and but...

11.27.10 Monte Cristos & Scott's fries

There was a Monte Cristo recipe in this months foodnetwork mag...and it's one of Scott's fav sandwiches...so he looked up the recipe online for Bennigans (his fav) and we made them...oh my! This is the weekend after Thanksgiving and it has been a huge blessing...a surprise. For the first time in quiet a few years, I have been looking forward to the holidays and hoping for them to be joyful...and this Thanksgiving was...at least for me, and I think for most of my family. We cooked together, laughed together, griped a bit, and got over it...and ate wonderful food together. Last night was time for Scott & I to cook together at home and Monte Cristo's were the thing...for the first time too...and they turned out great. We agreed a little room for improvement, but they were great for a first run! we followed this recipe...but did cut off the bread crusts and no tooth picks, but rather wrapped the sammies in saran wrap for 30 min-6 hrs (i think we did about 1.5 hrs) ...

11.23.2010 burgers, & fries

any meal that begins with sauteeing onions and mushrooms must be a good idea. ground chuck, each burger 1/3 lb...seasoned with s&p and garlic powder whole wheat buns...makes them healthy, right? swiss, i think sauteed onion...so good you could put it on top of vanilla icecream decided to top these burgers with sauteed mushrooms...baby bellas, sauteed with butter/oil, s&p, high temp till browned all around...then toss in one chopped clove garlic at the end and deglaze with a little wine...oh, my goodness!  I would eat just these with a big loaf of crusty french bread and call it a night. I believe the secret in the fries is to overcrowd the pan and cook the crap out of them...they turn out like a mix between a chip and fry..so great!  It's like having a bag of Lay's potato chips that married a french fry from In & Out Can't help but look at my freshly painted toenails...makes dinner taste better when your toes are cute! gotta hav...

Fish and "chips"...and salad...a regular meal in this house...at least while we're still chubby, okay, FAT. a pic of my man doing dishes, a beautiful (& common site) in our home...he's a better housekeeper than me, by far.

4.8.10 Ribeyes, Fries & Joy

Scott's fries with fresh rosemary Scott pulled our marinating steaks out of the freezer...they have been in the marinade we made for our steak tips that we did a few nights ago...Yoshida's and such....now they've been marinating for at least 4 days....looking forward to Scott's fries, which he just told me he's cutting.... marinated ribeyes... fries fryin fresh out of the pan fresh chopped rosemary...from our favorite rosemary bush the rosemary bush i planted when we lived in this building, which is right next to our mailboxes...its just huge now...Cheyenne loved to rub his head under her...we called her is girlfriend "Rosemary"...and his little furry head would smell so good Cheyenne Moses Works...oh how we miss him Golf, Tiger Woods is on the tv...the sun is shining still, thanks to daylight savings and it was a beautiful sunshiney and cool day.  Got great news from homeoffice today about a chargeback rollup from an old agent, a debt which shouldn'...
