mushroom bolognese w angel hair & garlic bread 12.17.09 Thurs.

scott suggested pasta...and he graciously went to the store...as he has done for weeks now...benefiting greatly from his enjoyment of cooking :)...he sauteed baby bellas with carmelized onion which was deglazed with a little marsala, which he then added to our favorite store bought bertolli marinara, added some roasted garlic, a pesto chunk from the freezer (yay to the basil from this summer!), browned a lb of ground chuck, seasoned and simmered in water to cover till tender...drained then added to the sauce...covered & popped the sauce in a warm 250 oven, which I think makes the sauce taste richer, till we were ready to eat...served with angel hair and fresh garlic bread and fresh grated parmesean. delicious & very garlicky!

chix & pastrami sammies & fries 12.16.09

we watched a show on the best sandwiches in the country...and most of them were pastrami...which i must say is one of my favorite.  so scott went to the store and got boar's head shaved pastrami...decided to use the whole wheat bread we already had, but rye would have been so yummy...slathered with mustard...scott even pan warmed my pastrami for me...smelled like bacon almost.  he made his famous fries for us too...i peeled, cut and soaked the taters while he was at the store...team work.  still recovering from a raging sinus infection...and not too focused, so only managed pics of scott's extra sandwich toppings...he choose to use our left chix mixed with bbq sauce, a little bit of pepperoni that he crisped and rendered in a hot pan (i could just eat a plate of those!), tomato & cheddar cheese...he'd made a yummy "slaw" of shredded lettuce, s&p, (oh, having a de ja vue...weird, watching the nannie diaries and blogging about sandwiches in bed)...anyway...

creamy tortellini mushroom asparagus bake i've been in bed all day, sick since last week...today i've eaten hot cheetos & left overs-stuffed puff pastry pockets scott made last nite...washed down with lots of water and medicines to keep my coughing at bay, although nothing works...scott just sauteed onions and baby bella mushrooms and my mouth is watering...the plan is to make tacos with the left over chix meat...but now i want to bake the garlic bread that's in the fridge and top it with the onions and mushrooms...the smell is permeating the apt...they are so delicious! the left over puff pastry pocket. so delicious, with crusty cheddar cheese bits that were melted over the top i wish i would have felt better last nite to take pics of scott's puff pastry packets...i was miserable on the couch..although I think there is one left...maybe i'll still get a pic. (I did!, see above) we made a creamy, mushroom, asparagus tortellini bake the nite before and he use

Pizza, Christmas Lights & Sunday nite football 12.6.09

The house still smells like pizza...which was delicious...my most used food descriptive lately.  We were planning on baking taters with bbq chicken topping...but Scott was jonesing for pizza.  We contemplated delivery...but after checking the deals online...and thinking of what we could make ourselves...or at least dr up from the store...it was Market Street U-bake pizza.  Scott went to the store for the pizza and extra toppings...I started sauteing onion, garlic and pre heating the oven to 450.  He was home soon with the mushrooms, pineapple, jalepenos..(not No Heat ones)...we accidentally bought these a week or so ago...who would want No Heat jalepenos??? What's the point???? They hardly taste of anything!  Anyway...the mushrooms went into the pan after the onions and garlic were sticky sweetly carmelized...and then the shrooms were deglazed with a little of the pineapple juice from the canned pineapple...yum!  Next it was a diced, fresh tomato warmed in the heat of the pan aft

Christmas Spirit, Armadillo Eggs, Football, Chili and a friend to share it with us 12.5.09

I finally got a chance to put up my minimal Christmas decor today...Scott bought me my favorite Costco wreath, which is hanging in front of our big mirror in the dining area by a big gold ribbon...lites on the porch, stocking hung with care...and my tiny little tree...it smells and looks like Christmas...it even snowed a few days ago. My little Christmas tree:)...my lights are on outside the door, you can barely see em here. A good buddy S.G. came over for football, beer, laughs and food tonight...after he went to our old apt (that he helped us move from) first...LOL...anyway...this is a man who knows his food...a rib smokin' champ...and he loved our chili!  A very high compliment.  Another nite of Marriage Chili...and armadillo eggs which Scott saw on FoodNetwork and decided to try our own spin on...it worked!  They were perfectly executed...and gobbled up. Marriage Chili...in the spirit of Christmas 12.4.09

It was time for a batch of chili...very cold and windy outside...weekend...just the perfect time.  Little Logan was hanging out and taking a nap...once I got it on the stove I could leave it be and tend to him.  His sisa and uncle scott are just addicted to the little guy.  He's so happy, so precious, so chubby and delicious.  Those big baby blues and big toothy grins just slay me...then his sweet jabbering and silly faces...so much fun.  By the time his daddy came by to pick him up the apt smelled like a chili factory...still does....and its what we are having again for dinner tonight (tomorrow?) Delicious.

Tacos 12.2.09

Tacos rule...I think we had tacos last nite too, with rotissiere chix and sauteed onion...tonight it was seasoned ground beef tacos ala Scott...delicious again!  Sauteed onions are just genius...who would ever think that cooking an onion could turn it from tasting like a sweaty, ripe armpit to perfection? 

The Great Potato 11.30.09

We've been baking lots of taters lately...already posted that fact earlier.  This one was delicious as well...cheddar, sour cream, butter, s&p..and bbq chicken (rotisserie) and steamed broccoli...YUM...and so simple...tater in oven at 400 for 1.25 hrs..poked,oiled and salted...top it...and EAT...how simple is that?

Chix Marinara Capellini & a special wishbone 11.29.09

We've been using rotissiere chix a lot lately. Scott gets em and strips em clean and we use the meat over several days...He usually sets aside the wishbone so we can pull it...and I've won the last two times. This nite, he set it aside to dry out...and when we pulled it he reminded me to make a wish...I told him my wish, then he told me his, and they both were for our near future...I immediately said "I want us to both get our wishes"...then we pulled...and for the first time in either of our lives the wishbone split exactly in half! God is into details...very cool. Tonight we made our favorite marinara using our go-to store bought/dr'd up sauce..then added our shredded chix and served with Capellini, Scott's favorite pasta for marinara. So delicious. Another meal helping us feel at home in our new place.

Mac N Cheese...the second test 11.28.09

Well, we still had the other half of the cavatappi left and most all the other ingredients...so it was time to make "THE" mac n cheese again.  I couldn't help myself and I took a video of it bubbling when we took it out of the oven...which is my kind of Action film! It was as delicious...actually even more so this time. This is in my top 5 favorite homemade dishes ever...there are leftovers when its just for Scott and myself...which are so good for breakfast, lunch or dinner later.
