Frittata's....Yoshida's beef tips and mashed taters

We started the day with a frittata and toast...one of our favorite weekend breakfasts.  We had about and ounce of jalepeno cheese sausage from Tyler's BBQ in Amarillo...so Scott suggested a fritatta.  He chopped up the sausage, and we added smoked gruyere, parm & spinach.  YUM!  whisk it all together,  with a pinch of salt and pepper.  Add a 1/2 tsp of baking powder and flour, whisk in.  Add to a hot 8 inch pan that has hot melted butter in it....then after about 2 minutes add to a 350 oven for 15-20 min.  Check often and pull out when just set...you can show it to the broiler for 30 sec or so if need be.  Serve with buttered toast and jelly..Scott likes salsa too. We finished the day with Scott's beef tips and taters. We got Yoshida's   Yoshida's website  in Cali and used that to marinate, with an extra dash of ginger, ground garlic powder,  basil and pepper flakes.  If you can't find Yoshida's...I'm so s...

12.24.2011 Twas the night before....

Smells so good...left over chili for dinner again...i had little burritos mixed with our killer pinto beans and Scott had a frito boat...love leftovers...all the joy and the work's already done! Like a food mutual fund! I cooked herby tender dressing, green bean casserole ala Paula Dean, sauteed carrots, celery, onions, mushrooms...how could it not smell devine?! We laughed so hard tonite we cried.."food baby" oh from the mouth of babes. Laughed over silly stuff and it felt so joyful...Christmas eve marriage joy...nothing like an evening cooking, eating and laughing with your love & best friend of 20 yrs. There were tubs of potatoes...literally 10 lbs...a pyramid of butter...now tucked in bed with "Little Women"...here's a little of what we did tonight . 8/19/11 Slow cooker Pot Roast

Scott wanted to break in the new slow cooker with a pot roast...so I got to come home to this delicious meal.

Decided to do the creamy chicken and shrooms again.  Scott wanted mashed taters.  It wasn't as good as last time...but still good.

We had a GREAT Saturday...found a new hang out...Gold Class Cinema's in Fairview...Oh I LOVE that place!  Went to see Iron Man 2 in a reclining seat...like we were in our own private viewing theater..fun fun fun!!! Scott declared it was time for him to cook for us as we went out for very delicious pizza at BJ's last nite...so he decided upon his herby, panko chix tenders ( a little of our summer basil in the breading), his famous garlic mashed taters...oh so creamy!...a tomato salad with fresh basil & balsamic dressing and a little peppery cream gravy. I've listed all these recipes on her before...so here's the mouthwatering pics! I am a very blessed girl who got flowers from her Daddy today too!

3.28.10 Teriyaki Steak Tips over mashed taters

Oh Joy! We found Yoshida's at Costco again!  I should buy a case of it! We marinaded the steak (ribeye's Scott found on sale) in a mix of Yoshida's, soy, lemon, red pepper flakes, fresh herbs (basil and cilantro)...we skewered them, grilled em and mixed em up with sauteed peppers & onions and mushrooms...sooooo yummy Served on top of Scotts famous garlic mashed taters and topped with a sprinkling of fresh herbs. A winner for sure!  We had two steaks left over, so we froze those for later...should have saved the leftover marinade! Scott took the meat of the skewers and mixed it with the sauteed vegies Scott's garlic mashed taters...peeled, boiled taters (these were russets), mixed with butter, cream and roasted garlic from Market Street..s&p...deeelicious

chix fried steak, garlic mashed taters & toasted almonds 12.18.09

Christmas was soon approaching this night...Scott had the idea for chix fried steak, so he went for it and I stayed out of the kitchen.  The menu, chix fried steak, white gravy(which I think I helped with, so i guess i was in the kitchen for a little bit), and Scott's famous (at least in this house) garlic creamy mashed taters...it was great in flavor although the steak coating wasn't as crispy as it's been in the past.  Still a delightful winter meal. yummy cream gravy, lots of fresh black pepper steaks a fryin' creamy garlic mashed taters I also was preparing to make toffee this weekend...didn't happen...but did get the almonds toasted and ground...yummy just realized I'd already blogged this the day of...just cut and pasted it onto what I wrote today 12.18.09:went to see avatar together today...pretty good, beautiful to look at.  still coughing incessantly, or at least it feels like it...can't sleep, can't think straight to get any work done...but i c...
