4.18.10 Pork tenderloin tacos & baking with the Joneses

Braised pork tenderloin, with carmelized onion, bellpepper and mushrooms the Joneses...a family of four with two little munchkins...we love them so.  I'd decided to make something that could basically cook itself, so I wouldn't be in the kitchen (Scott either).  We bought a pork tenderloin at Market Street for the occasion and all the fixins and I braised it in the oven in our Big Red dutch oven.  Here's the recipe...which little Kayton deemed "not bad"...high praise for a picky 1st grader!  Lyssy's Braised Pork Tenderloin Around 2 lbs pork tenderloin (one package of tenderloin from a regular grocery store) 2 oz pancetta 1 lb baby bella 'shrooms, sliced in thick slices 1 roasted, skinned and peeled red bell pepper 2 med yellow onions (next time I'd add more onions and peppers...hatch or poblanos too) olive oil S&P and ground Cumin to taste (to season the pork) 2-5 Cups water or low sodium stock (or chix base) 4 cloves garlic, smashed Preheat oven t

I could have just had a plate of the green beans and been extremely happy Inspired by an Anne Burrell cooking show...which was actually for trout and green beans...we decided to do the green beans exactly and chicken instead, but with the same herby bread crumbs and lemon sauce. Wicked Bacon Braised Green Beans, based on a recipe by Anne Burrell Extra-virgin olive oil 1/4 pound bacon, cut into small pieces, and 1/4 lb of diced pancetta (or use just bacon or just pancetta) 2 garlic cloves, smashed Pinch crushed red pepper flakes 1/2 pound baby bella mushrooms, sliced Kosher salt 1 pound string beans, stems removed (got em at Costco, already stemmed) 1 cup chicken stock Coat a large straight sided skillet lightly with olive oil. Add the bacon, and bring to a medium heat. Cook until the bacon has gotten brown and crispy and has let off most of the fat. 4.13.10 Fish & Chips...and finally a good hushpuppy!...& Sprinkles cupcakes

Shouldn't you always start with dessert?! Had to stop and get Sprinkles cupcakes today...one Red Velvet & one Peanut butter Chip Great fish and chips...made with sole, fries made with russets and a hushpuppy recipe similar to Paula Deens... Almost Perfect Hushpuppies 6 cups peanut oil or other vegi oil 1 1/2 cups self-rising cornmeal (didn't even know there was such a thing) 1/2 cup self-rising flour 1/2 teaspoon baking soda 1/2 teaspoon salt 1 small onion, chopped & sauteed 2 TBS chopped candied jalepenos 1 cup buttermilk (maybe less) 1 egg, lightly beaten Using a deep pot, preheat oil for frying to 350 degrees F. Using a mixing bowl, stir together the cornmeal, flour, baking soda, and salt. Stir in the onion & jalepeno. In a small bowl, stir together the buttermilk and egg. Pour the buttermilk mixture into the dry ingredients and mix until blended. Drop the batter, 1 teaspoon at a time, into the oil. (I'd do larger) Dip the spoon in a glass of wat

4.8.10 Ribeyes, Fries & Joy

Lyssy's favorite M&M chocolate chip cookies

M&M chocolate chip cookies These are my favorite cookies....every time Scott eats them he talks about how good the cookie dough is.  He is a huge fan of M&M's...but was impressed with the cookie themselves I agree...I often make a half batch...roll them in cookie balls, freeze, then bag them...then you can make 1 or all of them when ever you want.  I got this recipe from a book called The Perfect Chocolate Chip Cookie...and this is. Mom is in love with Scott's coconut shrimp...and has been requesting it for months... here is the little army of shrimp all ready for the fryer oh so yummy, dipped in sweet chili sauce Dipping Sauce: we use bottle sweet chili sauce, but this is really good too 1/2 cup orange marmalade 4 teaspoons rice wine vinegar 1/2 teaspoon crushed red pepper flakes Peanut oil (or other vegi oil), for frying We doubled this recipe for 2lbs of shrimp 1/2 cup all-purpose flour 1 teaspoon salt 1/2 teaspoon baking powder 2/3 cup water (we used a can of coconut milk mixed with the water to up the coconut flavor)...just keep adding till not too thick 2 cups shredded sweetened coconut 1/2 cup bread crumbs (panko) 1 pound medium or large shrimp, peeled and deveined (we did two today...and only 3 were left) Directions Add all dipping sauce ingredients to a pot on a low temperature. 3.28.10 Teriyaki Steak Tips over mashed taters

Oh Joy! We found Yoshida's at Costco again!  I should buy a case of it! We marinaded the steak (ribeye's Scott found on sale) in a mix of Yoshida's, soy, lemon, red pepper flakes, fresh herbs (basil and cilantro)...we skewered them, grilled em and mixed em up with sauteed peppers & onions and mushrooms...sooooo yummy Served on top of Scotts famous garlic mashed taters and topped with a sprinkling of fresh herbs. A winner for sure!  We had two steaks left over, so we froze those for later...should have saved the leftover marinade! Scott took the meat of the skewers and mixed it with the sauteed vegies Scott's garlic mashed taters...peeled, boiled taters (these were russets), mixed with butter, cream and roasted garlic from Market Street..s&p...deeelicious

He just saw this picture and cracked up...that was what he said the caption should be...the impact of his sweet mama and her housekeeping rules...white glove and all are coming home to roost...so funny! 3.19.10 Madi's bunny house

Madi's Bunny House...3.19.10 hanging out with Sisa getting started on our annual bunny house tradition...the cutest and tastiest bunny house ever. this is our tradition...spring and winter. we added lemon oil and rose water to make our yellow and pink frostings yummier...the smelled so good. Madi really does the decorating...I'm just her sioux chef...she mixes the frosting and everything! the master frosting piper making a heart and filling it in now the candy flowers in rainbow formation the bunny house gets "bunny ears" for the picture the frosting exploded...uh oh!  happens every time! oh well...I'll lick it off! is she not the cutest little baker ever!? now for pink sparkly sprinkles more fine tuning.. so proud...see her name in the back yard?  Sisa helped love her little headband...she found it at Nana's house...so precious adding some final touches of pink sparkle dust...this is serious work!...and the bunny getting "bunny ears"...so funny!
