12.27.2011 Last cheese burger of 2011

Cheeseburgers on the George Foreman...about 6 minutes was med well...less next time...but still very juicy and crusty on outside.  Delicious with a pickle and sweet & spicy jalapeno kettle chips.

We were blessed with a beautiful George Foreman grill for Christmas...so pasta & chicken it was for dinner. Scott seasoned two chix breasts with s&p and a little olive oil...grilled for several minutes (what ever the directions called for)...they were seared perfectly!  Gotta love George! 1 jar Bertolli marinara..perferable tomato basil 1 onion sauteed, 1/2 lb mushrooms chopped and browned, 1 chunk pesto (in freezer from summer basil crop)  Chicken chopped and added Rigatoni....boiled in salted water top with fresh Parmesan...EAT...I had leftovers of this today...YUM :)

Christmas Menu: Mikey's Kentucky Fried Turkey Honey Baked Ham Scott's Garlic Mashed Taters & gravy Lyssy's stuffing Paula's green bean casserole Marie Calendar's Chocolate Silk Pie Opal's Toffee..a.k.a. "crack" My brother carving his turkey...he is a genius with any meat cookery...he rubbed herbed butter under the skin and sprinkled some sort of deliciousness on the outside...it may have been magic...then deep fried it for 45 minutes.  The outside was like the best KFC original recipe skin ever...then the inside was juicy and herby...so stinking awesome!  I think he'll be selling them next year...so place your orders early!  I'm not kidding. Dad gilded the Lilly by adding some fresh made crispy bacon bits to Scott's already divine mashers green bean casserole and dressing toffee...she was a bit shy for the camera...she is prettier than this...I don't think I even ate one piece...I make it

12.24.2011 Twas the night before....

Smells so good...left over chili for dinner again...i had little burritos mixed with our killer pinto beans and Scott had a frito boat...love leftovers...all the joy and the work's already done! Like a food mutual fund! I cooked herby tender dressing, green bean casserole ala Paula Dean, sauteed carrots, celery, onions, mushrooms...how could it not smell devine?! We laughed so hard tonite we cried.."food baby" oh from the mouth of babes. Laughed over silly stuff and it felt so joyful...Christmas eve marriage joy...nothing like an evening cooking, eating and laughing with your love & best friend of 20 yrs. There were tubs of potatoes...literally 10 lbs...a pyramid of butter...now tucked in bed with "Little Women"...here's a little of what we did tonight . 12.23.2011 Taco...the cheap family meal

family gathering tonight...we brought tacos for the gathering...its the current go-to dinner on the fly.  It's cheap, feeds a lot of people, everyone loves them and its so easy...and keeps you busy so you don't strangle your beloved family during the holiday stress. The best taco meat for a crowd of 6-8: 3 lbs ground chuck (get freshly ground) taco seasoning packets or make your own...bayleafs, salt, pepper, cumin, pepper, chile powder (over season as you'll be simmering in water to tenderize)...brown in a little oil, season well, then cover with water and simmer, drain just before eating. corn tortillas fried in hot oil till tender crispy topping of choice: cheese, lettuce, salsa, carmelized onion etc

We made our marriage chili with one variation...2.5 lbs of ground chuck chili meat...sooo yummy...there is still about 6 cups of it in the fridge...its so cold outside, perfect chili weather

mushrooms, broccoli, chix, and some creamy sauce...of course I'm not sure exactly what we made...maybe mac n cheese or just a creamy pasta...looks good either way...see if I don't write it down right away I don't remember what we eat...what a shame when most of it is so good.

well...it's Christmas eve eve...and I'm more in a Grinchy mood than Christmassy...so I thought catching up and writing about food might be just the thing. I don't think I've kept up since school started in Sept...but of course we've still been eating. one of my favorites...Market Street hot wings (boneless & bone-in) with celery and blue cheese...although we've begun to do our own bone-in baked in the oven till crispy about 30 min at 350ish and then tossed into 3/4 Frank's 1/4 butter...or mom's sherried wing sauce (brown sugar and soy)...cheap and sooooo good.

9/22/2011 Sour Cream Chile Enchiladas

Before the oven after the 350 oven (about 30 min) Before my tummy We'd talked about this recipe about a week before...Scott surprised me by remembering and making it...we'd had killer baked chile rellenos & chicken enchiladas the weekend before at a local restaurant...and talked about something like this. Works Chile Chicken Enchiladas 1 BBQ rotisserie chix, peeled/shredded 1 sauteed onion (diced) optional 2 sauteed celery stalk (diced) optional 4 (or more!) roasted/peeled/diced Hatch (or Poblano peppers) shredded Monterey Jack cheese (3/4 lb) 24 fresh corn tortillas 1 (10oz) can mild red (or green) sauce Fried potatos (shoe string) Sour Cream Sauce: All-Purpose Flour butter milk sour cream Mix all vegies/chicken and 1/3 of cheese. Fry tortillas and pat dry. Put 1/4 of can of sauce in bottom of 9X13 pan. Fill with chicken filling and several fried taters/roll. Top with rest of can of sauce. Top with Sour Cream Sauce Top with remaining cheese Bake 30 or so min at 350 (ti
