Steak green chile strata 4.27.15

Inspired by The Pioneer Woman again ...love Rhee!   Rhee's strata recipe. We changed the ingredients...Scott was the one who was inspired to make this.  It's great for using left over bread, which we always have too much of in the freezer.   We used what we had at home instead of Rhee's ingredients as far as veggies, cheese and meat, but used her basic recipe as a guide.  We had left over steak, red peppers and roasted green chiles like poblanos or hatch.  I think we added pancetta or bacon too.  Pepper jack and or cheddar jack is great in this.  I love a frittata and this is just a frittata with bread.  So easy and yummy. This was hard to stop eatting and great room temp and left over.  It's great for breakfast, lunch or dinner.  Serve with a side salad as a elegant but simple lunch or dinner.

We had leftover verde sauce in the freezer…and it is insanely good with eggs.  OH MY!

8.10.13 bacon frittata & toast

I use Ina Garten's frittata recipe as a guide..but it's really just whatever we have in the fridge, a little protein, veggies, cheese with a sprinkle of flour and baking powder…all in a very hot small sauté pan with a little hot butter in the bottom.  Then in the 350 oven for about 10 min.  Serve with a little salsa and toast.  YUM

Frittata's....Yoshida's beef tips and mashed taters

We started the day with a frittata and toast...one of our favorite weekend breakfasts.  We had about and ounce of jalepeno cheese sausage from Tyler's BBQ in Amarillo...so Scott suggested a fritatta.  He chopped up the sausage, and we added smoked gruyere, parm & spinach.  YUM!  whisk it all together,  with a pinch of salt and pepper.  Add a 1/2 tsp of baking powder and flour, whisk in.  Add to a hot 8 inch pan that has hot melted butter in it....then after about 2 minutes add to a 350 oven for 15-20 min.  Check often and pull out when just set...you can show it to the broiler for 30 sec or so if need be.  Serve with buttered toast and jelly..Scott likes salsa too. We finished the day with Scott's beef tips and taters. We got Yoshida's   Yoshida's website  in Cali and used that to marinate, with an extra dash of ginger, ground garlic powder,  basil and pepper flakes.  If you can't find Yoshida's...I'm so s...

John's cognac cream sauce and steak crazy mac n cheese...yes that's pancetta wedge salad...lots of these lately too chicken cordon blue from market street (bought pre-made and we baked), with mashed sweet taters and salad happy valentines day! \ chocolate dipped cream cheese stuffed strawberries mooyah sammies and cheetos how cute is his little coffee set up...all ready for the morning :) some crazy good pasta with artichoke hearts and shrimp with grilled fish that he created...my mouth is watering just looking at the picture the beer got a little frozen :) meatloaf...inspired by ina mashed taters!!! shredded pork enchiladas with sour cream topping & I've been losing weight since August of 2012...25lbs!  all while eatting this amazing food!
