5.8.10 Scott's herb chix tenders, garlic mashers & (almost) summer tomatos with basil & balsamic

We had a GREAT Saturday...found a new hang out...Gold Class Cinema's in Fairview...Oh I LOVE that place!  Went to see Iron Man 2 in a reclining seat...like we were in our own private viewing theater..fun fun fun!!! Scott declared it was time for him to cook for us as we went out for very delicious pizza at BJ's last nite...so he decided upon his herby, panko chix tenders ( a little of our summer basil in the breading), his famous garlic mashed taters...oh so creamy!...a tomato salad with fresh basil & balsamic dressing and a little peppery cream gravy. I've listed all these recipes on her before...so here's the mouthwatering pics! I am a very blessed girl who got flowers from her Daddy today too!

5.6.10 Burger time

Scott was really wanting to make a steak..he'd done Delmonicos marinated in Yoshida's and onion rings over the weekend for him and a buddy (I was at mom's with the kiddo's)...but burgers were the compromise.  I love my Scott's burgers!...no fries, but really crunchy tater chips, cheddar kettle chips tonight...a better bet for summer...less cooking in the hot kitchen...with some tricked up Bush's baked beans, the ones with bourbon & brown sugar, Scott added a dash of Yoshida's and Frank's :)  Gotta have some sauteed onion and cheese...and a few pickles...Delicious!

5.3.10 Rainbows & Summer salad season begins!

we love to make salads with lots of great ingredients topped with our homemade balsamic dressing...tonight it was little succulent shrimp, chopped roasted chix breast, chopped roasted almonds, tomato, cucumber, mandarin oranges, tender spinach & crunchy romaine, parmesean shavings... the chix, oranges, tomato and cucumber marinating in the dressing now for the greens! shrimp marinating in the dressing parm shavings and chopped roasted almonds (my favorite part!) we had an afternoon rain and a fabulously beautiful full rainbow too...God is so good to us.

4.29.10 Enchiladas on the fly

What to have for dinner?  Enchiladas!  You can always raid the fridge, roll it up in a corn tortilla, top it with enchilada sauce and cheese..Viola! These had a little....spinach, sauteed pepper & onion, cheese (cheddar & provolone), sauteed baby bella mushrooms, roasted chix breast, all mixed up and layered with red enchilada sauce soaked corn tortillas (scott tried soaking them in the warm sauce ahead of time and they all melded together...he panicked for a second...but we just layered it like lasagna and it was YUMMY... onions & peppers, with a dash of red pepper flakes 'shrooms chopped spinach corn tortillas, provolone, red enchilada sauce ready for the oven...375 or 350 for 20-30 min..till bubbly

4.25.10 Anne Burrell's braciole & wicked green beans

Anne Burrell inspired Braciole served with a side of capellini and wicked green beans (already on here) (this is for 2 or 3, a half recipe) 1/2 lb capellini Extra-virgin olive oil 1/4 cup finely diced pancetta 1/2 large onion, finely diced Kosher salt Pinch crushed red pepper flakes 1 cups day old (sourdough or Italian)bread, crusts removed, cut into 1-inch chunks 1/2 cup milk 1 cloves garlic, smashed and finely chopped 1/4 pound button or cremini mushrooms, sliced 1/4 pound spinach, stems removed and cut into chiffonade 1/4 cup toasted pine nuts (we used toasted pecans) 1/4 cup grated provolone ( oh provolone is soooo yummy!) 1/4 cup grated Parmigiano-Reggiano 1 pounds top round, cut into 1/2-inch thick slices (about 12) (MAKE SURE THIS IS AS LARGE IN DIAMETER AS POSSIBLE...GET BUTCHER INVOLVED...ITS TOUGH MEAT AND WON'T BE EASILY BEAT INTO SUBMISSION AND WILL BE VERY HARD TO POUND OUT TO FIT STUFFING!!!!!) we learned the hard way stuffing...mushrooms, spinach, brea

4.23.10 homemade nachos

Scott made homemade nachos with corn tortilla chips...fried em up and topped em with left overs from the fridge and baked em to melt the cheese...great idea...we love nachos

4.19.10 Pork tenderloin leftovers

Leftovers are so wonderful...all the enjoyment for a fraction of the work...yum beans, pilaf, guacamole, shredded lettuce, cilantro and shredded pork tenderloin...yummy!
