July 28 BLT sandwiches on crack

Scott proposed his idea for dinner while we were chillin' on the couch.  I was enduring teacher pro devel courses online while he was watching golf.  He cooked last night, me the night before...now for tonight.  He told me his idea and then I was reminded of the sandwich Adam Sandler made in Spanglish and showed him the video.  They were very similar.   Video of Thomas Keller best sammie ever .   So he started with bacon ( we had a stash in the freezer...as anyone should!) but fueled by a must needed margarita..I was enduring CE courses after all...but to the fragrance of bacon my bacon fat stash that remains in my fridge at all times.  it mostly goes in beans and chile verde...but I can't imagine throwing away bacon drippings...I was raised right! See that hand sneaking in!  Five perfectly rendered pieces of thick cut bacon...the trick is to cook slowly to render the most fat and have a balance of crisp and chew.  Un-rend...

i'm posting this months later...so i think this is toasted bolio rolls topped with sliced pork loin, marinara, fresh basil.  how bad can that be really?

7.13.10 7-11 sandwiches, kettle chips & a shiner

I have been totally uninspired to cook for myself with Scott working out of town ...while he's making spaghetti and such for himself...I'm eating 7-11 sandwiches, kettle chips and washing down my lonely little dinner with a shiner in a crispy cold mason jar.  I think the fact that it's 159 degrees outside is also dampening my desire to fire up the kitchen.  I honestly enjoy a little time to myself, complete control of the "flicker", all the covers...I don't tend to get too lonely...but my meals are just a little sad as of late...but hey, it's still what's for dinner as I sit down to my computer to write...and unlike the flamin hot cheetos I'm so fond of, at least this dinner doesn't leave me needing alka seltzer...I actually recommend 7-11 sandwiches in a pinch...thinly sliced turkey, with swiss cheese and southwest spicy mayo on wheat bread.  Not soggy, simple and a half sandwich, small bag a chips keeps me going on those nights when my kitche...

chix & pastrami sammies & fries 12.16.09

we watched a show on the best sandwiches in the country...and most of them were pastrami...which i must say is one of my favorite.  so scott went to the store and got boar's head shaved pastrami...decided to use the whole wheat bread we already had, but rye would have been so yummy...slathered with mustard...scott even pan warmed my pastrami for me...smelled like bacon almost.  he made his famous fries for us too...i peeled, cut and soaked the taters while he was at the store...team work.  still recovering from a raging sinus infection...and not too focused, so only managed pics of scott's extra sandwich toppings...he choose to use our left chix mixed with bbq sauce, a little bit of pepperoni that he crisped and rendered in a hot pan (i could just eat a plate of those!), tomato & cheddar cheese...he'd made a yummy "slaw" of shredded lettuce, s&p, (oh, having a de ja vue...weird, watching the nannie diaries and blogging about sandwiches in bed)...anyway......
