Prime Rib Chili and grills 4.8 & 4.11

My brother has built his own smoke house...and this is some of his smoked pork.  It was really smoky...a little too much, but he's fine tuning :)  He has a truly magical touch with cooking meat.  I don't know how he does it...but he can make the simplest cut, with the simplest ingredients and it's always amazing! We made a batch of crazy good chili...not our usual Marriage Chili  but something new. We had cubed pork, chuck ground beef and left over prime rib!!!! (original recipe called for filet). Whole tomatoes crushed, chili powder, cumin, paprika, basil, thyme, sage, oregano, and cilantro- all fresh herbs.  Worcestershire, simple syrup or brown sugar, jalepenos-fresh, blk pepper, anjeo peppers, nutmeg, shallot or onion and garlic, tomato paste, veal or beef demi glaze or reduced stock.  You'll have to tweak the amount of ingredients.  It was incredible.  Just don't add over smoked meat to it ;) Scott went to get a rib eye from o...

Christmas Spirit, Armadillo Eggs, Football, Chili and a friend to share it with us 12.5.09

I finally got a chance to put up my minimal Christmas decor today...Scott bought me my favorite Costco wreath, which is hanging in front of our big mirror in the dining area by a big gold ribbon...lites on the porch, stocking hung with care...and my tiny little tree...it smells and looks like Christmas...it even snowed a few days ago. My little Christmas tree:)...my lights are on outside the door, you can barely see em here. A good buddy S.G. came over for football, beer, laughs and food tonight...after he went to our old apt (that he helped us move from) first...LOL...anyway...this is a man who knows his food...a rib smokin' champ...and he loved our chili!  A very high compliment.  Another nite of Marriage Chili...and armadillo eggs which Scott saw on FoodNetwork and decided to try our own spin on...it worked!  They were perfectly executed...and gobbled up. Marriage Chili...in the spirit of Christmas 12.4.09

It was time for a batch of chili...very cold and windy outside...weekend...just the perfect time.  Little Logan was hanging out and taking a nap...once I got it on the stove I could leave it be and tend to him.  His sisa and uncle scott are just addicted to the little guy.  He's so happy, so precious, so chubby and delicious.  Those big baby blues and big toothy grins just slay me...then his sweet jabbering and silly faces...so much fun.  By the time his daddy came by to pick him up the apt smelled like a chili factory...still does....and its what we are having again for dinner tonight (tomorrow?) Delicious.

Chix Chili...our favorite 10.5.09 I'm behind...we have eaten so much good food already this month!  Let's see, Scott has made Chipotle Meatball sandwiches: premade meatballs from Market Street with Cheddar, sauteed onion on Market Streets delicious baguettes....then our favorite chili (although Chef John has a new one I must try...I'll let you know if this one gets dethroned as fav)...made with chix this night and gorgeous baby portebello mushrooms...THEN...Fish n chips...with the most delicious fries ever!  Scott cut them thin, soaked em in hot water, dried em then fried em till golden and delicious...the fish was tilapia, s&p, a dash of cayenne, dredged in flour, egg then panko mixed with fresh basil and rosemary...and fried it after the taters...Oh my!  We've had this several times lately...okay...I'm updated, a little...I'm sure they're are more pictures on my camera from meals I've forgotten to post...always tomorrow...the days of lighter food...

Bread Bowls

Scott was struck with the great idea...ok we know its not original...but new for us at home...to put our "marriage chili" in a small toasted sourdough breadbowl...and the results were spectacular! It took about 3 trips to different stores to find the right bread...but Market Street had an almost perfect bowl and it was inexpensive...around 1.50. We found a better one at Central Market for the next time we made it. Central Markets was a little bigger and less expensive...1.19. Any way, Scott gutted it and we toasted them after brushing them with butter/evoo mix...including all the breadcrumbs...s&p too. The first time we rubbed a garlic clove on the toasted bread...the second time I steeped garlic in the warmed butter/oil mix first. Both times sooo gooood! After toasting we layered chili with sourcream, cheese, bacon bits and more croutons. Oh...chili has reached new heights...but i don't know if we'll bother with the bowls next time because the croutons were so go...

Super bowl ribs...and chili...and friends:)

The superbowl was a few weeks ago...we had some of our PFS Crew over for the game...and grub...I am craving the ribs and chix balls....we ate... Shane's award winning, slow smoked ribs...Scott's buffalo chix balls with blue cheese dipping sauce...chili boats with fritos...jalepeno jelly cream cheese dip...cold beer...3 D glasses...toffee...brownies...and best of all friends The game was exciting but dissapointing ending to our crowd. But the food more than made up for it. Sorry I didn't get a picture of the ribs...we were too busy eating them.

"Marriage Chili"

dinner 10/27/2008 scott named this "marriage chili" because we cooked it together and we love it sooooo much...it helps keeps a marriage together. we make this chili very often and this was the first batch of the fall. its based on a chicken chili from emeril. chicken is good, but we both think pork is a little better even. we make a cast iron skillet full of crusty, sweet, fluffy, buttery cornbread to crumble in...and "sprinkle" cheese, usually a mexican blend and a scoop of cold sour cream with lots of fresh cilantro...oh its so beyond chili...it is only right its called marriage chili, i think the word 'sex' should be added to the title somehow, maybe 'sexy marriage chili'...it is really spicy you know...this may be one of my top 5 favorites. and it gets better each day...this recipe gives almost 10 servings...so we get to enjoy it a few days in a row...we don't get sick of it. browned pork=yummy sauteed pancetta, mushrooms, onions and ...
