shredded rotisserie chicken chopped bell peppers, tomato, cucumber going in with the chopped iceberg my lovely cocktail toasting almonds ta da...add some spinach leaves, basil leaves and crunchy noodles.  isn't it pretty? One of our most favorite meals, a variation of my mom's chinese chicken salad...and the dressing is the key.  this is the recipe that my 81 year old grandmother calls me for!  she loves the dressing and loses it sometimes, so she calls for it.  so precious.  chinese chicken salad recipe you can really throw anything in here with your favorite greens...texture is the key.  you need crunch, freshness and the sweet, salty, sour dressing...and a sweet grandma to share it with.

Our fav salad half of a HUGE red bell pepper 2 tomatoes 1 roasted chix breast 1/2 bag chow mein noodles 1 cup toasted chopped walnuts iceburg lettuce dressing: equal parts sugar, oil, vinegar, squirt mustard, s&p pinches, the BEST All gone Crazy Town convo today...I tell you it's time to take the show on the road and move somewhere tropical...Caribbean, Hawaii....taco/margarita stand baby.  Margaritas were certainly on the menu tonight: Batch: 4 oz lime juice (use tater masher to juice..very effective) 2 oz trip sec 8 oz tequila 2 oz (or just shy) of simple syrup infused with basil pinch of salt poured over ice in frosted glasses serves 2 generously all while watching Rocky of course...while 104 degree heat swelters outside

shredded greens, romaine & iceburg chowmein noodles (crunchy!) tomato feta toasted walnuts dressing: equal parts oil, sugar, white vinegar, s&p (pinch), squirt of mustard and drizzle of sesame oil.

12.11.10 Mom's bday & a salad dressing explosion

Okay...see the Olive Oil bottle?  Well it's full of salad dressing I made for Chinese Chix salad for mom's bday lunch...we had delicious sushi, but also needed a non-fish dish...so salad it was...well I was making the dressing in mom's super duper blender (think industrial)...and was wanting to mix it a little further...asked my bro to retrieve the lid and proceeded to shift the blender a little closer to the edge of counter...well, the blender has little "light switch" type buttons, and as I leaned my more than ample bosom on it, the blender turned on while the lid was en route...(a little off kilter too) and "WHEEEEEEEE"....dressing (this one has quite a bit of sugar in it..think STICKY!) shot straight up and all over me, and the kitchen...I was dripping, drenched in dressing...all thanks to my big boobie.  Well, needless to say, we all had a great laugh and I (& the kitchen) smelled of vinegar for a while.  Happy Birthday Momma...the salad was ...

9.29.10 Works Chinese Chix Salad & Choc. Souffles!

Oh how I love this salad....we've made it several times lately...it's based on my mom's recipe...I use her dressing recipe with a small addition of a splash of sesame oil...just a splash makes all the difference. Scott thought we should make an addition recently of roasted pumpkin seeds, which we'd purchased at Central Market...a day which started out with a great chiro adjustment from the fabulous Dr. Matt...and ended with Scott having a torn off toenail from a grocery cart at CM..:(  where we got the pumpkin seeds, roasted and seasoned with a little tamari :)...we add avocado (Scott's contribution also), a sweet bellpepper (red, yellow or orange please).  Well it is just one of our favorite meals ever...and is nostaligic for me...mom made it a lot as a kid...what a great momma I have! I imagine I've posted the recipe before...the dressing is the most important part and I often make extra. 1/4 Cup oil (olive or neutral oil like Canola) 1/4 Cup sugar (...

This is a meal from my childhood.  My momma makes a mean CCS...and this one is based on hers.  Crispy lettuce, a sharp vinegar dressing.  Crunchy asian noodles (mom used freshly poofed bean noodles)...slivered toasted almonds and sesame seeds... and freshly shredded rotisserie chix...this was so good it was hard to stop eating.  Served with soft, yet crispy garlic bread.
