We had a GREAT Saturday...found a new hang out...Gold Class Cinema's in Fairview...Oh I LOVE that place!  Went to see Iron Man 2 in a reclining seat...like we were in our own private viewing theater..fun fun fun!!! Scott declared it was time for him to cook for us as we went out for very delicious pizza at BJ's last nite...so he decided upon his herby, panko chix tenders ( a little of our summer basil in the breading), his famous garlic mashed taters...oh so creamy!...a tomato salad with fresh basil & balsamic dressing and a little peppery cream gravy. I've listed all these recipes on her before...so here's the mouthwatering pics! I am a very blessed girl who got flowers from her Daddy today too!

Scott's cast iron chicken, soy broccoli & cucumber/tomato salad 10.19.09

It was time to begin lightening up the meals around here.  Time to shed some excess baggage.  Scott seasoned a couple chix breasts with s&p, a tiny bit of cayenne and some garlic powder.  He added 1 tbs olive oil to the pan, got it hot and then perfectly seared the chix.  It looked and tasted lightly blackened, which we love, and was juicy inside.  I made a full two heads of broccoli, added a little soy, a tiny bit of butter-like a tsp or so, a little water, covered it with cling film and nuked it for a few minutes. It steams in the cling wrap.  I learned this from an old Asian friend.  This is one of my favorite ways to eat broccoli, its kind of addictive.  Then a sliced cucumber, a few sliced roma tomatoes with our favorite balsamic vinegrette.  I was so good, and it was nice to not eat something so heavy.  I need to bone up on my broccoli recipe, 'cause I over cooked them just slightly and a little too much soy...but other t...

This is Scott's new favorite salad...Simply a sliced tomato, sliced fresh mozzarella and fresh basil, layered and doused with our favorite balsamic vinaigrette ...which i think is already on here. We are having this a lot this summer...its nice to have our big pot of basil. We had it with Scott's Chix tenders this night...7.17.09...oh I must stop to say that my sweet (an insufficient word) husband just brought me a cocktail:) Equal parts apple juice, orange/pineapple/banana juice, vodka with a lime wedge...vacation in a glass! I even got it in a martini glass! So fun...okay back to the food. my personal chef:) master of the kitchen and the chix tender! i couldn't decide which picture i like more...both! my surprise cocktail...again couldn't decide which picture...both! Thanks "Captain Love";)

McNeely's Ranch Steakhouse

four handcut ribeyes... We are at the Mc's Ranch Steakhouse tonight....Sammy has a new Weber grill that needed a proper review...so he bought a 16 lb rib eye roast, cut us thick steaks and is ready to throw em on the grill. He peppered em, freshly ground and rubbed it in really good. Judy is making a tomato salad and baked taters and grilled peppers, onion and squash...and the beverage of the evening is a chilled bud light lime. Malbec red wine is also on the menu...a wine Judy is introducing to us that she was introduced to by a friend of theirs...one of their cruise, wine club buddies:) Tex is making sure all is well on the ranch...and awaiting scraps of ribeye...smart dog:) We have so much fun at the Mc's house...oh, and we can't forget the beautiful strawberry shortcakes with chocolate drizzle and vanilla icecream prepared and presented by the master...Sammy. The Mc family is evidence that we were supposed to be in Texas...we were meant to know them...meant to be bless...
