Snow & Spiced Baked Taters 12.29.09

BBQ Baked Taters Mom ended up in the hospital from 12.19.09 till late Christmas day...so Christmas was all about banding together as a family to "survive the day"...not very festive, but purposeful, if not very exhausting.  We (Scott & I) were also sick during the whole break (me a week before even) with sinus infections...miserable...so I don't really know what we ate...I didn't eat much while sitting in the hospital room with mom...focused more on her eatting well and me surviving the stress.  And I was so ready to have a joyful Christmas...well, there were things to be thankful for, but joy wasn't something I experienced.  I imagine that was mostly due to my lack of perspective, but it is what it is.  you can see the snow flakes in this pic Well, we were blessed with a lot of snow (and Daddy being home for several days!) during Christmas and this night was one of them...we made spiced (paprika, sugar and salt?) baked taters, topped with something yummy th...

We've been baking lots of taters lately...already posted that fact earlier.  This one was delicious as well...cheddar, sour cream, butter, s&p..and bbq chicken (rotisserie) and steamed broccoli...YUM...and so simple...tater in oven at 400 for 1.25 hrs..poked,oiled and salted...top it...and EAT...how simple is that?

Baked Taters with shredded rib topping 11.17.09

We had two huge taters and Scott was thinking something already prepared and ez...gettn no arguements from me...so he got the ribs from Market Street, shredded the meat, added a little Tony Roma's bbq sauce and we topped perfectly baked, tender taters with the meat.  Delicious!  and so simple.  We've done this again recently with rotissiere chix meat with bbq sauce and it was even better.  The perfect baked tater: 400 degree oven washed, poked, oiled and salt & peppered tater.  place taters on a piece of foil, then directly on the oven rack.  for really large taters, set the timer for at least 1hr 15 min...maybe 1 hr for slightly smaller taters.  I love it when the skin gets all crispy, but the inside is soft and fluffy.  poke with a knife to check tenderness...nothings more dissapointing than a pretty, yet hard tater.  Top with soft, melting butter, s&p, sour cream, cheese and bacon! YUM...we finished the meal with the few bite...

McNeely's Ranch Steakhouse

four handcut ribeyes... We are at the Mc's Ranch Steakhouse tonight....Sammy has a new Weber grill that needed a proper review...so he bought a 16 lb rib eye roast, cut us thick steaks and is ready to throw em on the grill. He peppered em, freshly ground and rubbed it in really good. Judy is making a tomato salad and baked taters and grilled peppers, onion and squash...and the beverage of the evening is a chilled bud light lime. Malbec red wine is also on the menu...a wine Judy is introducing to us that she was introduced to by a friend of theirs...one of their cruise, wine club buddies:) Tex is making sure all is well on the ranch...and awaiting scraps of ribeye...smart dog:) We have so much fun at the Mc's house...oh, and we can't forget the beautiful strawberry shortcakes with chocolate drizzle and vanilla icecream prepared and presented by the master...Sammy. The Mc family is evidence that we were supposed to be in Texas...we were meant to know them...meant to be bless...
