We've been trying different pot roast recipes...and each time we declare it's the best recipe ever.  I've lost track of all the recipes we've used, and of course we didn't write it down. But I do have the most recent and therefore the current winner of the Most Delicious Pot Roast award in the Works home.  This isn't the recipe we used for the pic above...but the one that  inspired by a braised short rib with gnocchi recipe on Pinterest.  Click for recipe We used chuck roast instead of short ribs, brown the heck out of the meat, which we cut into large chunks...about 4 inch square-ish and add a whole pound of carrots and more chopped onion than it says.  I say nix the gnocchi and add potatoes or serve with polenta or mashed potatoes.  Either way, serve with buttery, crusty bread for sopping.  This was insane!!!

Southwestern Pork Tenderloin Pot Roast  The windows are open, cool breeze flowing in the air...Fall is officially here! I don't know if its because I was born in the fall or if it's just my personality, but Fall is hands down my favorite season. It's refreshing, holds the promise of celebration of the upcoming holidays, including my bday. The air today is reminiscent of the coast. I am 15 again, just waking up in my tent just off the beach in CA. I feel inspired in this weather...and relaxed. Well Scott was inspired to make a pot roast with the pork tenderloins we had in the freezer...he defrosted them yesterday and after church this AM, we came home and cooked it together. It's been a perfect day so far...waking up together after a great nights sleep...church, breakfast, shopping for groceries for dinner...cooking together, then him off to watch football, and me to write. Happy Easter! We went to church this morning and saw my sweet brother handing out bullitens! What a nice change of scenery for him...he looked very handsome, and happy. Well we decided pot roast would be good since we were going to be gone for the afternoon, which didn't pan out...but the pot roast was still good! The first time we made this recipe was New Years Day...but I forgot to blog it, but thankfully I wrote it down in my notebook...its really closer to stew since we cut the meat up..but the flavors of pot roast 2-3lbs London Broil, large chunks or any other good roast...used chuck roast today 5-6 cups chopped vegies, carrots, potato, onion, mushroom, celery...all cut in chunks, browned before adding to pot..you can leave small taters whole or cut in large chunks 1 pkt onion soup mix 1 pkt slow cooker pot roast mix (opt.) 1 can cream of mushroom soup (opt.)
