creamy tortellini bake, puff pastry pockets, cheetos, tacos & kleenex 12.13.09-12.15.09

creamy tortellini mushroom asparagus bake
i've been in bed all day, sick since last week...today i've eaten hot cheetos & left overs-stuffed puff pastry pockets scott made last nite...washed down with lots of water and medicines to keep my coughing at bay, although nothing works...scott just sauteed onions and baby bella mushrooms and my mouth is watering...the plan is to make tacos with the left over chix meat...but now i want to bake the garlic bread that's in the fridge and top it with the onions and mushrooms...the smell is permeating the apt...they are so delicious!

the left over puff pastry pocket. so delicious, with crusty cheddar cheese bits that were melted over the top
i wish i would have felt better last nite to take pics of scott's puff pastry packets...i was miserable on the couch..although I think there is one left...maybe i'll still get a pic. (I did!, see above) we made a creamy, mushroom, asparagus tortellini bake the nite before and he used the left overs to fill little squares of puff pastry...so so so so yummy...about an 8 out of 10 compared to our mac n cheese (a 10), which the recipe was based on....i DID take pics of that...although S wouldn't let me take a video of it bubbling. Here's the tortellini pics and rundown.

sauteed mushrooms and pancetta

shredded chix

cream sauce, with a bit of pesto and blue cheese & roasted garlic added

the filling with blanched asparagus added

the cheese tortellini freshly (under) cooked slightly, added to the mix
the cream sauce added to the mix

poured into our favorite square baker & topped with buttered bread crumbs
baked at 375 for 30 min and let sit for 10 min (reference Mac n cheese recipe for other instructions)
over the weekend i was at my mom's, hanging with her, Erich & Logan for her bday and watchin' lo so his parents could celebrate his momma's bday too...felt like poo as a sinus infection was raging...but felt good enough for Erich & I to make our ez chix soup, minus the canned tomatos, per E's request, but added a bit of marinara to give it the tomato flavor without the chunks.  It was perfect...tiny noodles, garlic toast and warm chix/veggie soup..the soup is already on here...make it, you'll love it! and you really don't have to do much cooking for a great reward.  Mom even sauntered in after her much needed nap for a bowl of broth and noodles...the best medicine.
btw I did have the garlic toast with sauteed onion & mushrooms on top instead of tacos...it was all i'd hoped it would be.  mouthwatering and delicious!  i'll do that again!

scott's fixin's for tacos...

the garlic bread that was to be topped with the scrumptious sauteed onions & mushrooms...soooo delicious.

reminder to only blanch the asparagus for like 20 seconds, then shock in ice water...we used the same water to cook the tortellini
