Ceasar Salad

It was Dad's bday and we had to do a fabulous dinner!  
I forgot to take a pic of the salad before...can you tell we liked it?  We made a ceasar salad from scratch.  A recipe much like this one Salad recipe

This method is magic!  and easy
Rubbed in the spiced herb butter

The recipes we used

Chef John's 4 hour Prime rib
The oven off version of cooking a prime (or choice) rib.
Get roast room temp (at least 6 hours out of fridge)
Slather your entire roast with 1/2 stick butter, blended with TBSish ground pepper and tsp-ish of herb de provence,  per 3 lbs of meat, then liberally with salt.
Put in a 500 degree oven for 5min per lb (ours is 6.19lbs x 5min=31minutes), then turn oven off for 2 hours and DO NOT OPEN THE DOOR UNTIL THE TWO HOURS IS UP!
Don't need to let it rest further when done...been resting for 2 hours!
Cut and serve with Au Ju and horseradish cream.

Horseradish cream

1/2 tsp of dijon mustard
2 pops of Frank's
1/2 cup sour cream
2 TBS horseradish
salt and pepper.

Ceasar Dressing

SERVINGS: 6

The Dressing

  • 6 anchovy fillets packed in oil, drained
  • 1 small garlic clove
  • Kosher salt
  • 2 large egg yolks
  • 2 tablespoons fresh lemon juice, plus more
  • ¾ teaspoon Dijon mustard
  • 2 tablespoons olive oil
  • ½ cup vegetable oil
  • 3 tablespoons finely grated Parmesan
  • Freshly ground black pepper

The Croutons

3 cups torn 1" pieces country bread, with crusts

  • 3 tablespoons olive oil

The Lettuce

  • 3 romaine hearts, leaves separated

The Cheese

  • Parmesan, for serving
