11.21.2010 Enchiladas with shredded chix
Totally behind on my postings...lots of unpublished drafts...not a whole lot to tell other than several of the next posting including this one may not have a lot of detail....but some 'good eats' were had!
Bubblin' hot from the oven
enchilada sauce lining the pan
a filling of shredded rotissiere chix, beans, sauteed onion, red pepper, cheese..and then a bit of sauce
I steam the corn tortillas in the microwave in damp paper towels...then fill each, top with more sauce and cheese
baked at 375 for at least 30 min...till bubbly!
