fixins for devil rice

chicken enchilada's inspired by Maria's Taco Express
Maria's Suza de Pollo enchiladas: we did about 12...use whatever amount of filling desired
La Tortilleria brand corn tortillas or other fresh corn tortillas
chicken breast-roasted-shredded
monterrey jack cheese
tomatillo sauce:recipe below
Roasted Tomatillo Chile Salsa: by Tyler Florence
1 pound tomatillos, husked
1 white onion, peeled, sliced, quartered or whole
4 garlic cloves
2 jalapenos
2 teaspoons ground cumin
1 teaspoon salt
1/2 cup chopped cilantro leaves
1/2 lime, juiced
On a baking tray, roast tomatillos, onion, garlic and jalapenos for 12 to 15 minutes at 400. Transfer the roasted vegetables and any juices on the bottom of the tray to a food processor. Add the cumin, salt, cilantro, and lime juice and pulse mixture until well combined but still chunky.

Fill tortillas with chicken and roll, top with cheese, then tomatillo sauce and bake at 375 for about 20 min or until bubbly and top with dollop of sour cream and fresh cilantro
Served with Spanish rice aka Devil Rice
1 TBS bacon fat, 1 TBS butter, 1 TBS canola oil
1 onion, 1/4 c bell pepper, 1/2 small jalepeno, 1 small carrot, all diced fine
3-4 garlic cloves
2 cups white rice
1/2 cup vermicelli noodle pieces 
3 cups chicken stock
1 heap TBS tomato paste or 1 cups diced tomato
sauté all vegies in a little of the fat and set aside,
add more fat and brown the vermicelli then add rice and brown just a little
then add tomato paste to cook a little....
add stock and vegies back in...bring to boil and reduce to lowest setting possible, cover and cook 20 min.  Let sit 5 min after cooking before opening lid.
