Tortellini with Meat Marinara 9.24.09
We were a little at a loss as to what to do for dinner with what we had in the fridge this Thursday evening....we had frozen cheese tortellini and our favorite marinara on hand...so we used the tortellini instead of our usual capellini and it was so great! I remember that we'd done this for the first time when we were house sitting for the Mc's earlier in the month...you make do with what you have when the grocery store is a 20 min drive away. We loved it then and now again! We added some sauteed onion and ground beef to the sauce...making a rich meat marinara and then topped it all off with parmesean cheese and fresh torn basil leaves. The fresh cheese and herbs really help make the dish, especially when most of it came out of the freezer and a jar. The tortellini made for a very hearty "meaty" dish. I actually prefered it to the capellini. We've been adding these to soups lately, and now I keep some in the fridge at all times.
