Rotissiere Chix 3 ways 10.25,29,30.09


Scott was stripping a roasted chix clean, shredding the meat...and nibbling a little too..he shared :)  (this week)We've had enchiladas, burritos...and now tacos tonight.  The meat is so tender, flavorful and easy... no cooking involved.  The enchiladas were the best yet, in my opinion....the chix meat, a carmelized onion, 1/4 cup hot hatch chilis chopped, 3 small cans enchilada sauce, fresh corn tortillas, 1 russet potato large diced and browned, cheddar cheese, and properly (research Alton Brown) cooked baby bella mushrooms...he mixed all the filling together, dipped the fresh warm tortillas in a bit of warm sauce, filled, rolled, topped with sauce, cheese, baked at 375 for 30 min or so....DELICIOUS!  We had plenty for left overs...they were tender like tamales..."hard to stop eating "good.  topped with guacomole & sourcream btw
The burritos we had last nite...chix, onion, mushrooms, homemade pinto beans, cheese, all rolled into a large tortilla, brushed with butter and baked at 350 for 20 min till browned (on top of parchment paper lined baking sheet)...topped with sour cream and fresh made quacamole (lime, avocado, salt, Frank's hot sauce)...YUM!

Ohh. I hear the sizzle of tortillas frying for the tacos in the kitchen...HUNGRY.
Again, Scott comes to the rescue in the kitchen.  I have been uninspired lately, and he is always at the ready, planning dinner.  I'd be eating frozen pizza if not for him...which is yummy, but not so good to eat every nite.

...Ok...just ate the delicious tacos...so nice to just be called for dinner, walk in , pray and eat...it was delicious...now snug in bed...gnite
