Tilapia and Mango Cucumber salad


Scott took charge of dinner tonight...which is a very normal event...thank goodness. I cooked spaghetti last nite which was really good...but would have eaten leftover beans for dinner tonight. not a bad option at all but his was so much better. he got frozen tilapia (one lb)...frozen fish from the local walmart grocery was the best option...believe me. any smart person would want fresh fish from central market, but that's not an option on a week nite in Mckinney. anyway, he seasoned it with salt, pepper and garlic powder (Paula Deen's "house seasoning"), and pan sauteed it with evoo, just enough to coat the bottom of the pan. spritz with lemon after it was cooked. the salad was our usual 'house salad', romaine, torn with a chopped roma tomato, a sprinkling of crumbled feta, a few walnut halves (from Ca, that papa and grandma hand shelled and brought to TX...such love in those nuts). he added cubed cucumber and mango and it was all dressed with salt and our favorite balsamic vinaigrette. I was really wanted a carb...bread or pilaf...but ate it as it was and was so satisfied and full. we had our house wine...Merlot by oak leaf...about 75 cents a glass...who could beat that! we haven't eaten out in a while and i wonder how much money we've saved by eating our own cooking. i don't feel we've missed out on anything...just the opposite. especially for the money, i can't imagine many places we could eat as good as we have been by cooking for ourselves. we had an idea to turn this fish into a sandwich...toasted thin piece of sourdough, rubbed with evoo and garlic, topped with a garlic, lemon and herb mayo, the fish and maybe some sauteed mushroom and a little salad...open faced so the bread doesn't overpower the fish....so good.
