11.28.10 Sunday nite salisbury steak

Image
Salisbury steak...another one Scott found in the recent food network mag...with egg noodles. we went to breakfast at plano tortilla this am...and got cheese melted on the migas! a revelation...a must from now on...and then onto central market to walk off breakfast and have a walk around the disneyland of food.  scott was sure there was a proscuitto that was $100 a lb and i didn't recall, so we had to check it out.  indeed there was two that were over $100 a lb...both spanish hams...a taste test for those is due sometime.  we got another proscuitto 25$ per lb...6 $ worth, and several other yummies, like a baguette with proscuitto & black pepper.  the salsberry (way it should be spelled) steak with de cecco egg noodle pasta was very good.  a success. the highlight of tonight was the evening movie..."the case for Christ" by lee strobel...just stunning, inspiring and equiping...we both cried, discussed and were encouraged. now i'm wondering if...

11.27.10 Monte Cristos & Scott's fries

Image
There was a Monte Cristo recipe in this months foodnetwork mag...and it's one of Scott's fav sandwiches...so he looked up the recipe online for Bennigans (his fav) and we made them...oh my! This is the weekend after Thanksgiving and it has been a huge blessing...a surprise. For the first time in quiet a few years, I have been looking forward to the holidays and hoping for them to be joyful...and this Thanksgiving was...at least for me, and I think for most of my family. We cooked together, laughed together, griped a bit, and got over it...and ate wonderful food together. Last night was time for Scott & I to cook together at home and Monte Cristo's were the thing...for the first time too...and they turned out great. We agreed a little room for improvement, but they were great for a first run! we followed this recipe...but did cut off the bread crusts and no tooth picks, but rather wrapped the sammies in saran wrap for 30 min-6 hrs (i think we did about 1.5 hrs) ...

11.26.2010 Homemade pizza's with Madi

Image
I've always wanted to make my own pizza dough...so I did!  I used a quick recipe from my Chic Simple Cooking cookbook.  Used quick rise yeast and voila!  Was so inspired by Thanksgiving day that I decided to do this at my parents house the day after...especially since Madi would be there!  She's a great helper in the kitchen, and we've made pizza together before, just not our own dough.  Madi was so game...she stood on a wooden stool that's been around as long as I can remember...I asked her if she wanted to help...YES!  So at first she rolled out the dough and I turned it for her...then she wanted to do it all herself...okay by me.  She was even rubbing the rolling pin with flour!  Then we sprinkled a bit of cornmeal on a flexible cutting mat...put our rolled out dough on and topped it...Madi did almost all the pizza's and we ended up making a lot of them...I'd say at least 7.  She even spread out my sauteed onion and mushroom mixture which ...

Thxgvin 2010 It was a very good day...a day of miracles for me...there was relative peace (no pun intended), i had a joyful heart, my daddy was home, momma cooked! We all worked together, made it thru the gripes without any fights...dinner was great! God showed up big time for me today. My parents made soup together...mikey roasted a gorgeous turkey...mom proofed the rolls in the dryer! Genuis!..."bad ass" were my exact words to her. U know she's "herself" when she's coming up with ideas like that!...lolo was so happy, playing in his little "new" car...and just being a kid...throwing the football, playing peekabo at the table...amanda and i doing dishes...it was a blessed day...mom and i made apple pie..mom and dad cut the apples while i rolled out the dough...lolo got to watch his grandparents, parents and aunt and uncle cook and laugh together...i got lots of hugs and kisses from my dad (all my family)....got to cook w my brother, who loves to ...
