5.20.12 meatloaf & taters
3 thick slices white bread, torn
2 garlic cloves, chopped
1 med onion, chopped
1 celery stalk, chopped
1 med carrot, chopped
1/2 cup fresh herb (we used basil), chopped
12 oz ground chuck, beef
12 oz ground pork
12 ground veal
1 large egg
3/4 cup ketchup
1 tbs dijon mustard
1 tbs worcestershire sauce
s&p
2TBS light brown sugar
oven 375
pulse bread in processor till fine (about 2&1/2 cups)
pulse garlic and vegi & herb in processor till finely chopped
mix with bread crumbs
add meats, egg, 1/4 cup ketchup, mustard, worcestershire, 1 tbs salt, 1/2 tsp pepper. Mix gently using hands. Mold on lined baking sheet
sauce: 1/2 cup ketchup and brown sugar, mix till smooth and brush onto meat
bake till 160 degrees in center of loaf about 1hr 20 min. Let cool slightly and slice.
