Thanksgiving was actually really pretty pleasant this year...and I was a little surprised.  I'd made it clear that I would participate in bringing something, but pizza would honestly be fine, so whatever!  Well, sweet Mikey took the bull by the horns, cleaned up the house (parents), and he and Amanda shopped, Matt (Amanda's bro) smoked the turkey, which was the best turkey I've ever had!  Mikey made a huge pot of gravy, mashed taters, dressing, we brought ham and pilaf...and Mikey bought a few pies, key lime, pecan, pumpkin and then made a Zabaglione, which was so delicious.  Madi had her tree centerpiece, Logan his first Thanksgiving meal and dad made it home for a few hours to eat with us later.  Overall a great day with family and delicious food...very Thankful for that.  Uncle Erich even gave Logan a bath after his "bath" in Thankgiving food.

failed to mention that Erich was working his tail off to get the table cleared off...of the hundreds of lbs of boxes so we'd have somewhere to eat...so thankful for my brother's and all they do to make our family work, especially the things that go unseen.

Roasted Cauliflower & Mushroom Risotto

Scott made roasted cauliflower last week and I couldn't stop eating it hot off the baking sheet, which inspired this dish.  Scott made the cauliflower and mushrooms (which brought back childhood mushroom memories from a favorite Italian restaurant in my hometown) and I made the risotto.  1.5 C Arborio Rice 4.5 C Chicken Stock 1/3 C diced yellow onion 5 TBS dry white wine 1 C parmesan cheese/grated 1 lb sauteed sliced/quartered mushrooms (seasoned with S&P, garlic or garlic powder optional) 1 head roasted cauliflower, cut up roasted with olive oil, S&P at 400 for 20 ish minutes, until golden. butter and olive oil Follow directions on the back of the arborio rice box for risotto as a rough guide.  Add mushrooms and cauliflower (about 3/4 of cauliflower) to risotto, top with parm, an extra knob of butter, and EAT! Divine!
