Scott arrived home last nite...we met at B.J.'s for a drink and late nite snack...then home to sleep soundly and up for a day together!  A visit to mom & dad's...dad's buzzed hair and disappearing eyebrows, which mom hates..."don't talk to me right now!"...and mom recreating an infamous "flashing" moment with Scott...all to our amusement (how do you spell that word?)...then off to PTF (Plano Tortilla Factory) for Migas...then Costco for supplies & upgraded bedding...and off to meet Dad & Ee at the spa so the could work on my shelving etc....then the rest of the day with my Scottie (which he prefers I don't call him, but I can't help it)...noted the historic win for Spain in the World Cup...off to the store to purchase ingredients for lemon butter (& caper) shrimp...beer for the pool.  Earl Campbell sausage was added to the mix...and off to the pool to toss the little football and fight off the humidity and heat!
The prep work is done...butter is cubed, pasta water heating up...sausage sliced and ready to be browned off, shrimp deveined, lemon zested and juiced...Chariots of Fire set to record at 7, Out of Africa on now...a meal awaits.
So glad to have my "Scottie" home, safe and sound and always ready to cook and spend time with me.
He and Dad had a good, busy few day in Ok City fixing up a house...sweating and laughing together.

Lemon Butter Shrimp

1 lb shrimp
1/3 Earl Campbell sausage ,sliced thinly
1 lb baby bella mushrooms sliced
1 large lemon, zested and juiced (used only half of juice and zest...actually i burned the first batch so I really needed it all)
1 beer (in this case Blonde...something) or white wine...about half bottle needed, drink other half
2 sticks butter, cubed and chilled
1 cup grape tomatos, sliced in half
and half lb capellini or angel hair pasta cooked to al dente
brown off the sausage, set aside and reserve drippings to brown mushrooms. add TBS or so of oil/butter & brown mushrooms, seasoning with s&p...add shrimp till pink...add tomatos to warm thru...seperately reduce lemon juice, zest and beer (about 1/2 beer) by half...and whisk in butter...adjust flavor with more butter or heavy cream if needed, toss in a tbs or so of capers....toss pasta, shrimp mixture and sauce together and enjoy with buttery garlic bread...with the love of your life preferably.

shiner blonde (subbed for wine) lemon juice & zest reducing
2 sticks cold butter for sauce
Scott's infused oil...canola with basil,rosemary & roasted garlic
browned off earl campbell...subbing for pancetta or bacon
the shroom's were next...browning in earl campbell renderings, Scott's infused herb garlic oil and a little butter
lemon butter caper sauce...butter was whisked into the reduced lemon/beer and then capers added
roasted garlic sourdough toast
