7.5.10 Fourth of July left overs taken to a new level...McNeely beef filet sandwiches

We spent the fourth of July evening with our sweet friends the McNeely's at the McRanch with friends/family...so fun.  I even got a chance to mix up some banana cosmo's for the girls, Holly suggested the banana since we had no orange liquor..not bad :) It was great to hang out with friends & family, as soon as Mikey & Amanda arrived with the kids, Madi exited to the car to a warm and enthusiastic embrace of a similar aged little girl she'd never met...like long lost friends, so precious! It was great to watch the kids blow bubbles, Scott toss the football...and fireworks...Even got to love on our precious Tex, pit bull extraordinare.  I brought pilaf and Scott got a few rotisserie chickens which he promptly teased that he'd roasted personally.  Sammy grilled beef tenderloins and we were fortunate enough to bring a few slices home.  The next day we brainstormed (Scott & me) on how to use the little treasures...which were already cooked perfectly, still pink and tender in the middle and expertly seasoned by beef master McNeely aka Sammy.  This is what we came up with...

McNeely Beef filet sandwiches
with blue cheese mayo, avocado and Scott's buttermilk battered Vidalia onion rings on a fresh french baguette
(and yes, they were amazing)
1 fresh french baguette sliced in half, both ways to make four sandwiches
1 cup or so of good mayo, blended with plenty of crumbled blue cheese
1/2 thinly sliced ripe avocado, drenched in lemon juice
1 Vidalia onion, sliced into rings and drenched in Frank's hot sauce and whole milk buttermilk...soaked for at least 1 hr...then dredged in flour, egg, the flour again...left to dry on a rack in the fridge, then fried to perfection in canola (or peanut) oil....oh, my! 
8 slices beef filet, slowly rewarmed in a low oven in foil with a little beef broth and butter...just till warmed thru...not cooked any further.

Slather each baguette slice with blue cheese mayo...layer on slices of avocado, then slices of filet and top with onion rings.
A definate addition to the Works' Family Restaurant menu!

Banana Cosmo's
1 cup vodka
1/2 cup banana liquor (we were out of triple sec)
1/2 cup cranberry juice
1/4 cup lime juice
stirred and then shaken with ice...makes several drinks...the girls thought it a little strong, so you may add extra juice if needed...garnish with a lemon twist (or banana slice)
