tacos...again... from left overs

i must have a deep connection to left overs... other than a few condiments, most of our ingredients were all from left overs. left over seasoned ground beef from the enchilada lasagna which scott ate the last of last night...i ate a couple tacos last night, i guess preparing for tonight... we fried a few (ok, almost a half dozen) flour tortillas, filled them with the seasoned beef, left over sauteed onions (from the enchilada's), canned green chiles, fresh tomato & ice berg lettuce dressed with our favorite balsamic dressing (recipe to follow), sour cream we had in the fridge, el fenix salsa we had in the fridge (one of scott's favorites), ketchup for scott....oh and left over beans...of course! they were so delicious... our appetizer was brewskis (bud lite & st paulis girl) and football for scott, a movie snugged in the bed for me. scott was having a bit of with drawl from not cooking tonight...but he was ok...its so nice to eat well off the fruits of a previous day's labor...we also had a good laugh about a goofy situation at work for scott... all i'll say is it was regarding a tattoo and d.g. high tailing it out of the room..."what does that mean?...faith?...cross?" etc. we had a good belly laugh although i doubt we'll remember the story very well...
any way dinner was yummy....my mouth is still happy.
balsamic dressing: 1 part balsamic vinegar, pinch salt, pinch pepper, squirt mustard (1 tsp), 1 pkt artificial sweetner or real sugar (maybe 1 tbs), 2-3 parts olive oil or canola oil. blend well and use for any salad...its so good you can almost drink it.
