3.20.10 Chicken Soup for the Weary (Wishing for Spring) Soul

Its the first day of Spring...officially...unofficially it's snowing and freezing, in Texas.  So much for global warming.  My poor plants had to be brought in again...maybe I should wait to plant my herbs till later in the year next year.  It looks like a green house in my little apartment.  I was trying to pass the time of the freezing (almost) afternoon and chicken soup to the rescue.  pancetta homemade sourdough croutons steamy soup to warm me up A Snowy Spring Chix Soup 3 Chicken breast (halves) roasted w/ s&p, olive oil and shredded 1 onion, chopped 1 bell pepper chopped a cereal bowl full of celery...about 1/2 a stalk, chopped 1/2 a cereal bowl full of carrots, about 20 baby carrots, maybe 4 large, chopped 2 garlic cloves, minced a tsp of roasted garlic (crispy kind from M.S.) 1 tsp of roasted hatch chilies, minced 4 cups chix stock 1 cup water 2 oz pancetta, diced olive oil 1 tsp fresh chopped rosemary fresh cilantro parmesean rind h...

3.17.10 St. Patty's Day Veal

it was Scott's half day at work today...so time to cook together!  We made a trip to Country Burger for lunch and then to Costco...and found veal cutlets.   We've never cooked veal before so Scott was intrigued when I mentioned his favorite Veal Aristocrat at Napoli's.  We made a creamy mushroom sauce...but over cooked the veal.  The flavors were perfect...sauteed mushroom, shallot with cream sherry, cream, a little nutmeg and cayenne and melted mozzerella over capellini...just cook the veal a little less next time.  by the way I had a bright green I love St Patty's day shirt today..so festive. Happy St. Patty's Day!

3.15.10 Chix, Pancetta & Hatch Chili Enchiladas

Chix Enchiladas stuffed with sauteed onion, roasted hatch chilis, cheese and then topped with hot red enchilada sauce and more cheese...then topped with shredded lettuce dressed with balsamic dressing...and Scott topped with a little ketchup & a little mango salsa.  These were delicious and very spicy....ooh and they also had crispy pancetta too...so yummy!

3.3.10 Chix fajitas with peppers and onions

Scott picked up a regular brew and then some new weird blue thing, yucko and too sweet... roasted peppers in the oven & sauteed onions on the stove top guacamole, fresh California lemons from Grandma Wanda's peppers and onions marinated sliced chix...for fahitas

2.27.10 cupcakes

cupcakes with the mint chocolate frosting left from Madison's bday cake.... I was inspired by a recent Brighton catalogue with sparkley pink cupcakes...only recently finding the right sparkle...i must confess I ate most of them...don't know if Scott ate any...and some ended up in the garbage...he doesn't like mint particularly...but they sure were pretty...now if i can only find that catalogue for reference...happy cupcake eating.

2.28.10...i smell bacon

g.i jane is on the tv...its sunday nite, wine in my glass and I SMELL BACON. does it get any better? no. we're making, collectively, the two of us, seafood pasta primavera. we have a bunch of great vegies in the fridge that need to be used, then add delicious crab and shrimp from Costco, and a homemade cream sauce...viola...pasta primavera ala the works'. i don't even have the sunday nite blues...life is too good tonight for that. how can anything be "blue" when it smells this good? i have freshly planted flowers on my deck, chimes singing in the cool (almost) spring breeze and a handsome hubby cooking my dinner! life is good, God is Good. I just asked my honey if he needed any help..and amidst the sounds of him stirring his sauce he replied "nope, actually I'm in cooking heaven"...oh what a precious reply...like I said...life is good. p.s. i smell bacon because Scott declared that it was blasphamous to not have a little bacon in our sauce...oh so...

2.21.10 sole...oops I mean tilapia almondine

scott saw sole almondine on the food network...tyler's ultimate i think...well we had tilapia almondine and it turned out pretty good roasted broccoli w/ parm...not a fan...i've tried roasted broc several times, just tastes burnt.

2.20.10 Madi's 6th Bday

its actually the day before Madi's 6th bday. we're at Nana & Papa's house with the whole family...but missing Papa who's on the road. I think Madi had a great day...she's so precious and we had lots of good fun. I made a chocolate cake per her request...with a hint of mint and Mikey & Amanda ordered pizza for all. Uncle Erich got lots of decorations and Nana supplied lots of presents as always...you can always count on Nana for lots of presents! Chocolate Cake with Mint Cream Cheese frosting...box devils food cake mix...Duncan Hines, with Sprinkles Cream Cheese frosting with added melted chocolate and mint extract....decorations per sisa. Happy Birthday Madison!
